Salad and oatmeal from today’s meals

Also had homemade dressing made from a teaspoon of Trader Joe’s sweet and spicy mustard, black pepper, EVOO, vinegar, and watered it down to dressing consistency.

After going with my friend to find her wedding gown, we were famished and decided to get food.

Met up with a few other friends in Flushing and went to eat some delicious and super unhealthy Hong Kong style food. Dim sum appetizers, two different noodle dishes, rice in cream and ketchup sauce, and other goodies. 

Felt so fat and full.

Post jogging snack was a cup of cinnamon coconut milk and better’n peanut butter.

Lately, I’ve been having these really strong cravings for carbs and junk food. One of my weaknesses is a bowl of crunchy, sweet cereal…like Cinnamon Toast Crunch. The best part about that is usually the sugary, cinnamony milk left after the cereals eaten. So that was the inspiration for my cinnamon milk. Just took some coconut milk (1/2 cup) watered down to one cup then mixed in cinnamon and sweetened with a few drops of liquid stevia.

Peanut butter because …Peanut butter is delicious. The two combined is jaw dropping good.

Meals from today:
-breakfast was egg whites with spinach, mushrooms, onion, and a little Chinese basil.
-snack of peri peri protein chips (I liked this flavor a lot more than the sour cream)
-lunch of baked hoisin salmon, brusel sprouts, and cherry tomatoes
-afternoon snack of a juicy Macintosh apple
-dinner of a Quest cookies n’cream protein bar

Might have a little something extra when I’m home.

Today’s meals were chia seed and egg oatmeal for breakfast, apple for snack, summer rolls for lunch, protein chips for snack, and salad for diner.

Chips were interesting. Never had these before but they got boring quick and left a funny taste in my mouth. Still… 20g protein and 150cal all in little crunchy bites. It could be worse!

After work, I got my sister a guest pass at Equinox, my current gym. We did cardio, legs, and core/back on mat and machines. Afterwards we went to get dinner and I ended up at Cafe Metro with a mixed greens, raisin, boiled egg, sunflower seeds, beets, and corn chopped salad. Yumm.

Vietnamese summer rolls for lunch tomorrow!

6 rice paper wraps are about 200 cal and 41g of carbs. I made two for lunch so calories for the wraps alone would be a little under 70 cal and 14 carbs.

Stuffed them with chopped up romaine hearts, lemony cucumbers (from my lemon water), onions, green pepper, carrots, fake crab meat, and langostino tasks.

Made a dipping sauce out of watered down Thai sweet chili and sriracha.

Cauliflower “Fried Rice” with Basil Shrimp
Simple and very delicious.  I first chopped up some garlic and riced some cauliflower (diced into rice-sized pieces). Sauteed the garlic until fragrant and then threw in the riced cauliflower and cook until it browns slightly. Then I stir in some slightly cooked veggies (red pepper, onion, spinach) and sweet soy sauce.
The shrimp was cooked by first marinating it in garlic, onion, and chili powder. A little agave nectar and sesame oil was also mixed in. Key ingredient was lots of dried basil! Pan fried until fully cooked (careful not to overcook or it will be super tough).
Layer shrimp on top of the rice.
Bam! Lunch for tomorrow.

Protein Waffles
Similar to my protein pancakes are these protein-packed waffles! The batter is actually the same as my protein pancake batter. Only difference is that instead of using a pan, you use a waffle maker!
Protein Waffle/Pancake Batter: -1 scoop cellucor corfetti protein powder (or whatever protein powder you want) -1tbsp coconut flour -1 egg -1/3 cup vanilla coconut milk- Water until it’s more batter-consistency
Trick is to use it on a hot waffle maker for extra crispy pancakes.

Afternoon pick-me-ups when I’m at the office…

Green tea and mixed berries for the wonderful antioxidants and countless other health benefits for when I’m feeling a little sluggish and Iced coffee for those days I’m about to pass out and absolutely need caffeeine.
